Hello, my friends! Today is an extremely important day, because a year ago today I decided to start my blog, YellowEccentricity! I started off with books, and ended up covering nearly everything, and I’m so happy with where we are now. Today, I’ve decided to make two recipes for you in celebration: a frozen hot chocolate drink and a vanilla mug cake.
Let’s get started!
So, this frozen hot chocolate recipe has literally three ingredients, and is incredibly delicious and refreshing. It’s not a chocolate milkshake, but because it uses actual hot chocolate mix, it definitely depends on the kind of mix you use.
Here’s the recipe I used:
1/2 cup (170 grams) of milk
1 packet of hot chocolate
1 cup (340 grams) of ice
Blend it all together until completely mixed, then pour into a glass. You can top it off with whipped cream or Cool Whip, and then shave some chocolate on top. What I did was try to sprinkle some cinnamon on top, but I ended up dumping quite a bit on top there. (Whoops…)
But, overall, I’m extremely impressed with the outcome, and you should definitely try this really easy recipe.
Next, I made a moist vanilla mug cake. I used a pretty big mug, so the cake looked a little smaller than it actually was, but this does make quite a bit of cake. This one definitely uses more ingredients than the frozen hot chocolate, but it’s not as tedious as making a full-sized cake.
Here is the recipe:
4 tablespoons (30 grams) flour
1/2 teaspoon (2.5 grams) baking powder
3 tablespoons (22 grams) sugar
1/2 tablespoon butter (7 grams), softened
4 tablespoons (60 grams) milk
1/2 teaspoon (2.5 grams) vanilla extract
pinch of salt
Combine all of those ingredients until smooth, then put it in the microwave for 90 seconds. About halfway through, I took the cake out and added some multicolored sprinkles to the top. When I was done, I added the following icing:
I used packaged icing and dyed it yellow, adding in some yellow crystals to give it some more texture. This cake was very soft and moist, delicious, and worth the time.
